I live within walking distance to Costco which translates to me buying their Rotisserie chicken every other week. When it comes to meal prepping, Costco’s Rotisserie chicken is a dear dear friend. It provides me with homemade chicken broth and many healthy chicken meals. All without having to touch raw poultry which makes it great for newbie meal preppers and those who like to save time.
This crispy shredded chicken recipe is one of my favorite ways to make use of leftover of Rotisserie chicken breast. It is a super simple and delicious recipe that makes use of the breast meat to give it a completely different flavor. It is healthy and gives an added protein boost which is always nice.
Notes: You need a high quality non-stick pan to make the chicken crispy. I recommend this 12″ non-stick as my previous non-stick pans died on me within the year mark. But this one I have had for almost 5 years!
1 lb shredded Rotisserie chicken breast from Costco | 544 calories
3/4 tsp oregano | 4 calories
1/2 tsp garlic powder | 5 calories
1/2 tsp cumin powder | 4 calories
1/2 tsp jalapeno powder | 10 calories
2 tbsp olive oil | 248 calories
815 calories total | 4 servings @ 204 calories per serving

Mix 1 lb of shredded Rotisserie chicken with 3/4 tsp oregano, 1/2 tsp garlic powder, 1/2 tsp cumin powder, 1/2 tsp jalapeno powder. Refrigerate for 1 hour to let the flavors meld.
Add 1 tbsp of olive oil to a non-stick pan on high heat. Add in 1/2 lb of the chicken. Mix well. Use a spatula to press down on the chicken to ensure browning. Flip ever so often to ensure even browning of the chicken. On my stove on high heat I cook for about 5 minutes total. Cook 2nd batch of chicken.
I serve this Mexican style crispy shredded chicken with rice as I am trying to avoid wheat. But it also works great in tacos and quesadillas. It makes great use of plain old Rotisserie chicken breast to give it an added boost of flavor!
