I used to think Spaghetti Carbonara was this complicated pasta dish. No rhyme or reason, other than I only ordered it at restaurants. When I started seriously calorie counting, I no longer permitted myself to eat more than eight hundred calories per meal. As much as I enjoyed Spaghetti Carbonara, a restaurant sized serving is usually upwards of 1500 calories which is more than my daily caloric intake!
The only way for me to indulge was to make it myself. My recipe for Spaghetti Carbonara is one of my favorite meal preps because I can prep six servings in thirty minutes. However, I usually only make three servings at a time as I like variety in my meal preps.
To save even more time and energy, I use pre-cooked bacon bits. I highly recommend them because it tastes great with none of the cleanup and mess. I also sprinkle about 1 to 2 tsp of chopped Thai pickled radish per serving to add more umami flavor to the noodles. If you like pickles, I urge you to try Thai pickled radish because it was a game changer for me.
Meal Prep Notes: I often substitute Angel Hair for Spaghetti when cooking pasta. Angel Hair cooks in 4 minutes while Spaghetti cooks in 10 minutes. This dish stays fresh in my fridge for up to four days so the max amount of servings I will make is four at one time. Do not freeze as pasta does not taste good defrosted!
