This soup is absolutely scrumptious even for those whose favorite protein isn’t fish. Like me! The tomatoes combined with enoki mushrooms and a sprinkling of white pepper powder brings a clean taste to the soup so that there isn’t even a hint of fishiness. Additionally, a three cup serving is only 147 calories!
Restaurant versions of this soup are likely to add in a cup of ketchup, msg, and other flavor enhancers to make it even more delicious. However, it doesn’t need all that unless you want to add it. My recipe for this tomato and fish soup has 90% of the original flavor. But it is much healthier! Most of the time I also use homemade chicken broth but the calories listed for this recipe is for canned because everyone’s homemade broth varies in calories.
I urge you give this soup a try. Any white fleshed fish works though I mainly use flounder, sea bass or cod. You will not regret it. Every single friend I made it for loved it, asked me for the recipe, and remade it themselves. It is truly yummy!
Additional Notes: White pepper powder is a must for this dish!
Meal Prep Notes: Freezes beautifully after being cooled. Defrost within 4 weeks for optimal flavor.
